A simple and flavourful recipe using Beans and Tofu all the way from Tripura
One of the smallest states in India is Tripua. This state nestled in the North eastern region of India with Agartala as its capital. Along with other states such as Arunachal Pradesh, Assam, Manipur etc these states are called the SEVEN SISTERS.

This month our virtual food tour as part of Shhhhh Cooking Secretly Challenge went to the land of Tripura. Mayuri Patel who blogs at Mayuri’s Jhikoni was my partner for this round blogging. An amazing blogger and a fellow gujju, she has some amazing recipes in her kitty. Here are a couple of recipes that I absolutely love – Magas and Papadi & Zucchini Shaak. During our discussion we figured that Tripura doesn’t have too many options for us Vegetarians, so we each did our research and came up with recipes that we wanted to try. Mayuri gave me onion and turmeric and I gave her onion and chilli. sing these ingredients she created a lovely Brinjal dish called Brinjal Mosdeng

Of late I am always in search of any recipe which could help me increase protein in our meals, this Beans and Tofu recipe totally fits the bill and i loved making it
