It is believed that breakfast is the most important meal of the day, keeping that in mind here is my Healthy Sprouts Pancake. A protein packed flavourful pancake that can be enjoyed by adults and kids.
The lovely ladies of Shhhhh Cooking Secretly Challenge after visiting different states now were looking at doing something different and decided to try various types of pancakes. During my search for a very different recipe, i decided to concentrate on my strength of a known, tried and tested recipe. So after thinking a lot decided to make my own Healthy Sprouts Pancake.
My partner for this round was Jayashree who blogs at Ever Green Dishes. After a lot of discussion we decided on the secret ingredient that the other person should work with and create a unique and tasty dish. Of late our family has been totally into healthy eating and as part of that we have increased the protein content in our diet. This Healthy Sprouts Pancake or Dosa is my go to breakfast option for a middle of the week kind of day. Now let me give you insight on what goes into our Sprouts pancake..well everything. Its wonderful isn’t it? 🙂
How to make Healthy Sprouts Pancake and eat it too !!!
Step 1: Make sprouts 🙂 – I usually make a mix of multiple lentils – green moong, black channa, black udad and methi seeds. I take about 1 cup of Green moong, 1/2 cup of black udad, 1/2 cup of black channa and 3 tbsp of methi seeds in a large bowl. Wash the lentils nicely to remove any dirt or stones. Soak these lentils for atleast 8 hours. Once the lentils are soaked, drain the water and pour these lentils on a thin cotton cloth and tie the cloth in a knot. Leave the lentils inside the cloth for over 10 hours and then see the beautiful sprouts sprouting 😀
Step 2 : Grind the sprouts with soaked rice with sprouts into a fine batter
Step 3: Make pancakes on a hot tawa or gridle
Step 4: Eat it hot with chutney or jaggery

- 2 cups mixed sprouts
- 1 cup idli rice
- 3-4 nos Green chillies
- 1/2 cup corriander leaves (chopped finely)
- Oil (for making the dosa / pancake)
- Salt to taste

- Prepare and make sprouts as suggested in the post
- Soak the idli rice for over 6 hours
- Grind the sprouts, soaked rice, green chillies with salt and water
- Remove the batter into a separate vessel and add chopped coriander leaves
- Heat a tawa and prepare the dosa or pancakes with little oil
- Cook on both sides and serve hot with chutney of your choice
- Note: One can also fill these dosas or pancakes with vegetables such as grated carrot, chopped capsicum and / or grated paneer to make it look pretty and make it even more delicious

Very healthy pancakes, and they do sound very delicious! I make dosas with sprouts too, but minus the rice. Will try out your version some time. 🙂
These are super healthy pancakes. I think addition of idli rice will make it easily spreadable. Will definitely try this dish. By the way presentation is superb.
