Lauki Kofta, a very interesting recipe using lauki. Here is my version of non fried Lauki Kofta made in appe pan.

Kofta’s are a very integral part of the northindian cuisine. Does this give you a clue of where, us bloggers from Shhhhh Cooking Secretly Challenge went on a food travel? Yes, you guessed it right, the land of wheat, the land of Balle Balle and the land lassi – PUNJAB.
PUNJAB, a big state where agriculture flourishes and the food is just too good. Did you know that Punjab is also known as the Land of Golden Harvests On my bucket list of places to visit in India is the Golden Temple in Amritsar, which is situated in Punjab. A land of spirituality, Sikhs, food and lehengas comes my Lauki Kofta made in an appe pan.


My partner for this round of cooking was Ashima Goyal from My Weekend Kitchen ,she gave Cashews and Besan as the secret ingredients for me to work with and i gave her curd and cardamom. Lauki Kofta was an obvious choice to make but i decided to go a little healthy and make them in an appe pan.

- 1 cup grated lauki (tightly packed)
- 1 tbsp Besan
- 2 tbsp Cashews
- 1/4 cup Chopped onions
- 1/4 cup chopped tomatoes
- 1/2 tbsp Ginger-garlic paste
- 1 tsp Turmeric powder
- 2 tsp Red chilli powder
- 1 tbsp garam masala powder
- 1 tsp jeera powder
- 1 tsp Dhania powder
- 1/2 cup Curd
- 1/2 tsp cardamom powder
- 2 tbsp Chopped coriander leaves
- 1/3 cup Oil
- 1 tbsp Fresh cream

- To make the koftas, pressure cook the koftas with a little salt and cool it
- Remove excess water from the cooled lauki, add besan, some jeera powder and a little turmeric & red chill powder to it
- Mix them / bind them well and form small round balls which would fit inside the appe pan
- Heat the appe pan, with very little oil in each of the cavity of appe pan
- Place the lauki balls in each cavity and slowly cook on all sides till the sides get a nice golden colour
- Heat oil in a kadia and add onions to it and saute till they get a translucent
- Add the ginger garlic paste and saute well.
- Add the chopped tomatoes and saute till the tomatoes are nice and soft
- Add salt, all the masala powders, cashew and mix well.
- Grind the above mixture into a smooth paste and cook again
- Taste for salt and chilli powder and simmer for a couple of minutes with lid closed
- add the koftas and gently spoon over the gravy
- Garnish with some chopped coriander leaves and a little cream.
- Serve hot with rotis or rice

Lauki kofta looks delicious. You made the dish healthy by using appe pan to fry the kofta in less oil. Superb share.
I love lauki ke kofte and I am always looking for ways to make it with less oil. Making them in the appe pan is a great idea! Less oil and the same great taste 🙂 I sometimes also steam them.. they taste very different and nice that way too.
A question, in your first step for making the koftas, you say pressure cook the koftas. I think you mean pressure cook the lauki? Also do you pressure cook grated lauki?
Pressure cooking the lauki before making the kofta sounds interesting ! Loved the use of paniyaram pan here for shallow frying the koftas to make it guilt free affair. The gravy recipe also sounds simple, but it is not clear as to where you have you used the 1/2 cup curd.
Lauki kofta looks very delicious and creamy. The way koftas floating on gravy is very tempting. Using appe pan to prepare koftas sound healthy and innovative.
I am not fond of lauki, in fact I avoid it at all times. Your post however is tempting me to try out this lauki kofta, and I think Im going to enjoy making it as well as tasting it!
Delicious looking kofta curry Priya. I usually add paneer to bind the lauki and it was the first curry I introduced to my French daughter in law’s parents. Love the idea of adding cashew nuts and besan. I too love making all koftas in an appe pan.
The lauki koftas taste awesome, i had made it long back. Making the koftas in appe pan is a healthy option, I often make it this way. Tandoori roti pairs up well with this.

Lauki kofte in appe pan is a guilt free recipe. I love koftas and the curry, and making in appe pan, I am sure all will be gone before it even goes in the curry. Looks yum
