My version of Oriya Besara using drumstick and potatoes, a simple and flavourful sabzi from the land of Orissa

Every month I get to visit different states of India and sample their wonderful food…virtually !!! We, a, group of passionate bloggers from Shhhhh Cooking Secretly Challenge , this month traveled to the land of Lord Jagannath, Orissa. A land of beaches, wildlife, rivers and the Lord. My partner for this month, Kalyani Sri from SizzlingTastebuds gave me mustard and fennel seeds as my secret ingredients
In october 2018, we visited Bhitarkanika and Bhubaneshwar for about a week and that is when i got introduced to various vegetarian delicacies of Oryia food. Brinjal in a curd gravy, potatoes in mustard gravy, chenna poda etc etc..the list goes. Such simple yet wonderful flavours and the people were so nice. One of the main things i wanted to try after darshan of Lord Jagannanth was the prasad available in their courtyard. Some of the items on the prasad were peda, the besara, puri and also dalma with rice. The Oriya besara i sampled at Bhubaneshwar temple had only potatoes but the taste was very nice and unique

Today i present to you my version of Oriya Besara with drumstick and potatoes. One can use a variety of vegetables such as potatoes, pumpkin, drumstick, raw banana etc to make this Oriya besara

- 10 -12 nos baby potaoes
- 2-3 nos drumstick
- 2 tsp Cumin seeds (jeera)
- 3 tsp Kadugu/Mustard seeds
- 3-4 nos dried red chillies
- 1 tsp Turmeric powder
- 8-9 cloves garlic pod
- 2 tbsp panch phoran masala (a mix of mustard seeds, cumin seeds, jeera, nigella sedds and methi seeds)
- 2- 3 tsp mustard oil (or sunflower oil)
- Salt (according to taste)
- 2 tbsp Chopped coriander leaves
- 1 cup water

- To begin, wash and remove the skin of the baby potatoes
- Wash the drumsticks and cut them into pieces of 2 inches each
- Soak mustard seeds, dry red chillies, garlic and jeera in 1/4 cup of water
- Grind this soaked mixture into a smooth paste ( i like the taste of the masalas, so i made a coarse paste)
- In a kadai heat oil, add the panch phoran masala and on low flame let the mustard splutter
- Add the peeled potatoes, with some water and turmeric. Let the potatoes cook for a couple of minutes
- Now add the drumstick and the ground masalas along with the reminder of water and let them cook for a while.
- Add salt according to your taste and mix the sabzi well
- Garnish with chopped coriander leaves and Serve hot with rice and dhal

Colourful, bright and delicious looking Besara. I like it this way too, with panchphoron as well as ground mustard paste. With hot rice, ghee, Dalma, one can’t ask for a bette meal any day.
